Easy-Peasy Banana-Oatmeal Cookies

Ingredients

  • 2 bananas
  • 1 cup of oats
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of salt

Directions

  1. Preheat the oven to 375° F.
  2. In a bowl, mash the bananas with a fork.
  3. Mix in the vanilla, salt, and oats.
  4. Scoop dough onto a greased pan.
  5. Bake for 8-10 minutes or until the cookies are golden brown.
  6. Allow the cookies to cool for 5 minutes.
  7. Enjoy these healthy cookies!

Variations

Replace 1 of the bananas with 1/3 cup of the nut or seed butter of your choice (my favorites are peanut butter or tahini).

Turn it into a more traditional dessert with unsweetened chocolate chips.

Make it a flavor explosion by adding nuts, dried fruit, and spices. My favorite spice combination is turmeric, cinnamon, cardamom, and black pepper!
